My best guess is that contact with the air changes the colour from green to purple? (oxidisation, maybe?)

Well the skin is blue, the flesh is green, and the juice of the skin is purple, I don’t see how weird that is. I mean if you mash any human you’ll get some red soup, yet nobody has blood-red skin.

Well obviously we are dealing with some quantum pigmentation shit right here .-.
