Gear, what separates Tex-Mex from straight Mexican food?

Texmex has:

  • Ranch, mild-ass peppers and mayo in guacamole.
  • Cumin.
  • Yellow cheese.
  • Corn shells and wheat flour tortillas.
  • Beans from a can.
  • Beef from a grinder.
  • Using the word “chili”.
  • Chimichangas and burritos.

Mexico has:

  • None of that weak shit
  • Cilantro and parsley.
  • White cheeses.
  • Soft corn flour tortillas.
  • Freshly cooked beans.
  • Knife-minced meat.
  • Se llama chile, chingado.
  • Way more things than just tortilla wraps.
