micchy-did-nothing-wrong: Why does Tex-Mex lack so many delicious dishes from standard Mexican food? There's one meat dish I remember that's slow-cooked in some kind of dutch oven style setup(insert LizzyXGear joke here)? I dunno, it's buried underneath a bunch of hot coals and left to sit if I remember, and it's supposed to be really tender. Can't even find a crock-pot approximation of that anywhere I've been to, though.
It’s a mutton based thing called birria or barbacoa de pozo depending on the zone, and since I live in Michoacán I get to eat it for breakfast every weekend in case that makes ya jaelous - 3-
